Vacuum packing for freezer storage (-18°)

Freezer storage, thanks to the very low temperatures, slows down the life cycle of the microorganisms responsible for the organoleptic generation of foods.

Nevertheless, this procedure, especially for foods with a high amount of water such as fresh products or vegetables, risks the creation of a significant amount of damage to the food due to the frost that forms due to the humidity in the air present inside the package. Removing the air solves the problem. Thanks to the combined use of vacuum packing and freezing, the product is kept whole in both form and substance.



Mince can be stored already prepared as meatballs. A good tip is to choose an oval container and to separate any layers with a layer of aluminium. Once prepared and frozen, the meatballs can be removed from the freezer and cooked immediately without having to wait for them to thaw. Just brown or fry them right away, without losing any time.

Liver, heart, kidney, sweetbreads

For these foods before vacuum packing the preliminary step is fundamental. They must first be washed thoroughly and dried thoroughly. Place them in rigid containers or bags. This way freezing will be uniform and will allow better and longer storage.

Dry pasta, ravioli


For best storage, put them in the refrigerator to harden for a half hour after preparing them. Then, vacuum pack them, choosing the most practical and easy system for you (plates, trays, cardboard disks, etc.). Even the filling can be stored.


Pizza and pastry dough

Place the preparation in the container before rising. The yeast action will start again once the bag or box is opened and will finish in the usual time.

Chicken or turkey breast or cutlets


Beat one or two eggs (depending on the quantity of meat to be prepared) in a bowl along with a pinch of salt and pepper. Then dip in bread crumbs or flour, pressing well (to keep the breading from coming off during cooking). Let dry for about a half hour. Now you can proceed with vacuum packing. Separate the food with aluminium foil. As before, meat prepared this way can be cooked without waiting for it to thaw.

Birds, poultry, game and rabbit

After the proper aging time, clean them (offal must be stored separately) and prepare them as you wish (by separating them into pieces, preparing the roasts with bacon, etc.). Then vacuum pack them. When you wish to cook them there is no need to wait for them to thaw, they can go directly into the pan, dressing them as you like.
